Gorgonzola one of Italy’s most presitigious cheeses – and one of hte world’s great blue cheeses. But did you know that there are two types of Gorgonzola? There is the sweet, soft, creamy Dolce, and the harder, spicier Piccante. The latter is also known as Montagna, or mountain, Gorgonzola.
This cheese has a firm bite and, as its name suggests, a distinctly spicy note. The best versions have a gorgeous marbling which infuses the cheese with a very distinctive flavour of the penecillium roquefortii mould. It is great with fruit and nuts, as well as spicy chutneys, and can be melted into soups and pasta dishes.
Pair with hearty, full-bodied reds such as Piemontese Barbera and Chianti Classico, or with aromatic, textured whites like Alto-Adige Gewürtztraminer and Friulano Pinot Bianco.
